Albacore Tuna was a revelation! On my first foray into the jar, I was bowled over by the subtle fresh flavour of this pink fleshed tuna. I had expected a flavour similar to the Tuna found in a handy tin. How wrong could I have been?
The Albacore Tuna was fresh tasting, lightly cooked and moist in texture and so completely unlike the everyday grey, dry textured tuna we mash up with mayonnaise.
All sorts of food ideas flashed though my head – Hors d’oevres, tapas, canapés and Niçoise salads, but first I tried it in a simple brown bread and butter sandwich. Sensational.

Learning more about Albacore Tuna I discovered it is one of the smaller species of tuna, which migrates to the South East Coast of Ireland every August, reaching sizes somewhere between the skipjack and yellowfin. Albacore, like all tuna, is a rich source of complete protein, selenium and vitamin B-12. Their soft pink flesh, however, is more moist and delicate than that of many other species of tuna. In addition, Albacore contains significantly more Omega-3 fats. Omega-3s normalise and regulate cholesterol levels and greatly reduce the risk of heart disease. The tuna is packed in olive oil which is also health enhancing.
Using this lovely Atlantic Albacore Tuna, I have made Salad Niçoise and various canapés and find I am completely delighted with the taste experience. Goes well with a light white wine such as Pouilly Fumé.
